|Food, Hotel and Tourism Bali 2004, an event conducted bi-annually showcasing the development of the hospitality industry was recently held at the Bali International Convention Center, from 5 to 7 February 2004. In conjunction with this event, the ‘Salon Culinaire’, a culinary competition was held and participated by professionals from the Hotel industry in Bali.
During this competition, the culinary team of Hard Rock Hotel Bali won several prestigious awards.
Budi Dharma, Executive Chef of Hard Rock Hotel Bali together with Erlan Erlangga, Pastry Chef, won the silver medal for ‘Hot Team Cooking’ during the Culinary competition. Their winning menu consisted of Goat Cheese and Beef rolled in Crispy Pastry, Mahi Mahi Poke, Cornish Game Hen Duet, Fig Glazed Scallops and finally Warm Liquid Centered Chocolate Cake with Lime Sorbet.
In an another category, Ida Bagus Dwira, F&B Artist won a bronze medal for his vegetable carving creation, upstaging competitors from other four and five star hotels on the island.
Chef Budi and Chef Erlan were also awarded with a special trophy of ‘Best Culinary Team 2004’ in the category of ‘Hot Team Cooking’.
